Phosphatase Tests

Alkaline phosphatase (ALP) is an enzyme naturally present in milk. It is thermally unstable and can be destroyed by pasteurization (63 ℃ , 30 min or 72 ℃, 10~15 s can be inactivated). Its heat resistance is higher than that of non-spore pathogenic bacteria. ALP inactivation means that non-spore pathogenic microorganisms are all killed. Therefore, ALP can be used as an indicator of milk pasteurization.
