Evergreen Lactoperoxidase Activity Assay Kit
Lactoperoxidase (LPO) is a naturally occurring enzyme in milk. It is the most important peroxidase capable of oxidizing the thiocyanate ion (SCN-) in the presence of hydrogen peroxide (H2O 2). In milk, the main function of LPO is to catalyze the oxidation of molecules to produce products with a wide range of antibacterial activity. LPO plays an important role in the immune system of dairy cows. In the dairy industry, LPO is also an important intrinsic indicator for monitoring and assessing the severity of heat treatment, as it is one of the most thermostable enzymes in milk, which cannot be inactivated by an ordinary pasteurization process (63°C for 30 minutes or 72°C for 15 seconds), partially inactivated by an instantaneous pasteurization process at 74°C, and completely inactivated by UHT or ultra-high temperature pasteurization. Measuring LPO activity has been widely used to assess the extent and efficiency of mild heat treatment.
