Lactulose is a disaccharide composed of D-galactose and D-fructose, which is one of the important products of dairy thermal processing. The lactulose content in raw milk is very low, and after heat treatment, such as lactose in milk isomerization to form lactulose (also known as isomerized lactose). The greater the intensity of the heat treatment, the greater the amount of lactulose produced. According to this characteristic, it is used as one of the important indexes in the identification standard of reconstituted milk in NY/T939-2016 pasteurized milk and UHT sterilized milk. In order to accurately determine the content of lactulose in milk, the kit adopts the method of determining lactulose in NY/T939-2016.
